Vegan Mofo-Kabocha Squash

Since it's Friday and I don't have a vegan food product to really review. I'm just going to tell you what I think about kabocha (that took me 3 times to spell right) squash. I roasted some for dinner since I had two pieces of pizza for lunch and wasn't very hungry, that and I've had one sitting on my counter begging me to eat it (Just wondering is it suppose to have this sticky-ish juice let's call it coming out the stem after having it to long?). Since the camera is still missing. I don't have a photo and i'm sorry for that so I stole one.
(this picture is from www.mellissa.com according to google images)

The kabocha squash is most often called the Japanese pumpkin. Some say it's has a sweeter taste then a butternut squash. I however don't think it does, but it could have just been the one I had. I liked this squash nonetheless it was sweet, but not overly sweet. However next time I get one I will be making soup with it. I think that this squash would just be smashing with a curry soup, gingery, garlicy? I'm not sure.

I ordered some whole wheat blueberry bagels from etsy.com. So tomorrow for breakfast I will be having one with some toffuti better then cream cheese(I haven't tried this yet, so i'm glad to finally try). If I have time tomorrow I will be posting more information about it. I might not be able to post tomorrow or Sunday because I will be busy. When I get back I should be posting about some baked potatoes with some daiya cheddar cheese, sounds good right? right! Well it's late and I need to get off the computer.

Vegan Mofo-Oatmeal Cookies

My dad has been asking me to make some healthy oatmeal cookies for him, so when I saw Oh She Glows oatmeal raisin cookies I knew I just had to make some. I subbed a couple ingredients here and there like dried blueberries for raisins and agave for maple syrup(I couldn't find my pure maple syrup). They are sweet, but not to sweet. Just the way I like things. I couldn't even help myself I ate two in one day then yesterday I ate another two and today I had one. They are seriously hard to stop eating! They smell so yummy! Trust me if you like oatmeal cookies these are a must to make, not to mention healthy as far as cookies can go.

Dried Blueberry Oatmeal Cookies adapted from Oh She Glows
(I temporary lost my camera so I had to take this picture using the webcam on my computer)

Ingredients:
1 & 3/4 cups almonds
2 cups regular oats, divided
3/4 cup white whole wheat flour
1/2 cup Sucanat (or brown sugar)
1 tsp baking soda
1/2 tsp cinnamon
1/2 cup agave
2 tbsp almond milk
3.5 tbsp coconut oil (I think I used less coconut oil and added a touch more almond milk)
2 tsp pure vanilla extract
2/3 cup dried blueberries
Preheat oven to 350F and grease a baking sheet. Dump almonds into food processor and process until finely grounded. Pour finely ground almonds into a large bowl and mix together with sucanat, flour, cinnamon, and baking soda. In the food processor grind 1 cup oats and add that to the bowl as well. Stir until mixed in well together. In a small bowl add the coconut oil and microwave for 20 seconds to soften (if necessary). In the same bowl, stir in the agave, almond milk, and vanilla, and pour into food processor(or just be lazy like me and mix it in the same bowl as the coconut oil if it's big enough). Process until the mixture is thoroughly combined. Remove bowl from processor and dump contents the large bowl. Mix in the remaining 1 cup of oats by stirring or with hands. Fold in the 2/3 cup of dried blueberries. Take about 2 tbsp of dough, make a ball, and then flatten with fingers. Place on cookie sheet. Repeat. Bake for 10 minutes at 350F and no longer. Remove from oven and let sit on baking sheet for 2 minutes before placing onto a cooling rack for 10-15 minutes. Makes about 12 large cookies(at least for me anyways).

I had a lot of fun making these cookies considering I haven't ever used coconut oil or sucanat before and they turned out great! Although instead of oatmeal cookies, I'd probably call them granola cookies because they remind me of the granola I eat sometimes for breakfast.

For dinner i'm going to have just a pizza with veggies and pesto from whole foods, because well it just sounds good. Again sorry from not posting I'm going threw a rough patch I guess you could say so I didn't have time to post the last two days. I will keep doing mofo because I really don't want to quit. It's just hard to think of what to post and having the time to actually make something worth posting about. So I might not be able to post everyday, but I will at least post 20 posts this month or as many as I can get. Thanks for sticking with me on this. Now let's go eat some cookies!

Mofo Day Huit: Imagine Soups

Good evening lovely mofo people. If you can't tell from my day 2 of mofo and today. I can speak a tiny bit of French. It's so confusing all this feminine and masculine stuff. Anywhooooo....let's talk food. More importantly "simple, easy, already or almost to go vegan food" I've come to the conclusion that's my theme for most of Vegan Mofo month. Since that is what I've been eating lately. Right now i'm going to talk about Imagine Soups. Lately I have lived off of these because i'm to lazy, tired, and hungry when my dad gets home from work to actually make a spiffy fancy dinner. Plus theres enough for lunch the next day to eat with some veggies or toasted nuts.

*The pictures of the cartons below I have stolen off their website. *

Now my reviews of the soups.....

Creamy Potato Leek SoupCreamy Potato Leek- I love this soup, but then again you can give me any soup with potatoes and leeks and i'd love it. This is by far my favorite. I like to add cubes of potatoes in this. mmmmmmm. For being vegan this soup was very creamy so that's a total plus. Also it's less then 100 calories per cup if you are watching your weight or dieting.

Light in Sodium Creamy Red Bliss Potato and Garlic SoupLight in Sodium Creamy Red Bliss Potato & Garlic Soup- I liked this soup. It wasn't my favorite, but I liked it. I think it could definitely use some more garlic though. I chopped up some sweet potatoes to put in and it was a great touch. I had some steamed broccoli in it tonight that was a good touch as well, but not really necessary. I like the broccoli as more of a side.

Creamy Broccoli SoupCreamy Broccoli Soup- Not super duper broccoli flavored, but still good non the less. I bet it would be awesome with some daiya cheddar cheese and bits of broccoli(note to self:must try that next time). My dad said it needed more salt, but I think he says that to everything. I still recommend this soup though.

Light In Sodium Creamy Harvest Corn SoupLight in Sodium Creamy Harvest Corn Soup- This soup was my least favorite of all the soups. My complaint it was just to sweet. I'm not a huge fan of sweet things which would be why I didn't like it. So if you like sweet soups then try this soup.

Imagine Vegetable Broth- This is my go to for store bought vegetable broth. I think it's my favorite that I've had.

Mofo Day 7-Vegan Green Tea Pancakes. Fail.

I'm sorry to report, but I made some green tea pancakes and they failed. This is the second time I've tried to make pancakes not from a mix and they failed. I've come to the conclusion that it is maybe the flour that it making them the way they are? The pancakes had a hard outer shell and a doughy inside. The outside would always cook faster then the inside no matter what heat you had the skillet on. The only way I could make these eatable was eating them with a lot of raspberry jam. I didn't bother taking a picture of these pancakes because of the way they looked. :P I'm just going to stick to making french toast from now on. I'm good at that.
I've come to the conclusion that i'm a pretty bad blogger. I hardly post pictures and quite frankly my food that I've been eating is just sort of boring lately. I'll try and step up my game. Let's hope week 2 will be better. A lot better.
